Lloyd went to a school soccer game tonight, which could be its own post. Lloyd at a soccer game? But instead, this is about my dinner.
I’ve become a big fan of chicken & pesto pizza. In fact, I’m surprised I haven’t posted about it before, since I take pictures of it every single time I make it. We had it at ukulele night a couple months back and I loved it. It’s a good use for that bread dough, and normally I get all Italian with it and toss it up in the air and everything. (Not with skill, but lots of singing.)
The last couple of times I’ve been lazy, though, and just smash it into a circle with a rolling pin, prick holes all over it and throw it in the oven. (I cook the dough a little before actually making the pizza so the crust gets good and done.) If you don’t do a good job making the holes, this happens when you bake it:
Not a big deal, just pop it with a knife to let out the air, assemble as normal, then bake. (That photo is from last week.)
Would you believe that I messed up letting the air out tonight? Apparently I didn’t poke enough holes, because when the assembled pizza was in the oven, I kept hearing this weird hissing. Once I could tear myself away from the internet and check, I almost busted a gut.
It was a giant pizza balloon, dripping cheese and olive oil all over the pan. The thing was so puffed up and wobbly, it was hard to stab. Laughing and sharp knives are a dangerous combo.
It all ended up alright, though. Sorry you missed it, Lloyd.

Ha! I love the 1st picture … it looks so cute … I would forget the holes everytime, just so I could puncture it … Yea!
(whenever I bake brownies or a cake I ALWAYS put the egg shells into the box, and them smash ‘em … crunch! I love that! I wish I could do it right now … Sometimes my kids purposely smash them if they happen to be walking by before I can, ’cause they know it bugs me, and I get really mad … is that some sort of a syndrome?)
